Jim,
Rubrails are just long strips of hardwood about 3/16" by 1". You scarf joint em' to get the length and shape the fronts and backs - see Uncle Kurt Maurer's "Building a Pair o Mill Creeks" article in CLC's Customer Built Boats section for info and pics.
If you have access to a rip saw and fence, you can make them from any pretty planks your heart desires. Otherwise - off to the lumberyard.
