James, many people scribe a line inwards of the sheer clamps and paint to that, but one beautiful thing about building your own boat is you can do anything you want. My MC 16.5 is painted to the bottom of the rub rail. Others could paint right to the seam. Others can paint the whole thing or varnish the whole thing. If you want the nails to show, I'd figger you'd want to paint to the hull to deck seam, just like you say. Then whatever you want to do on the deck - whether you have in mind some sort of painted pattern, or a decal, or inlays or onlays... just decide for yourself, do it, and then post the pics for all of us to admire!
