Shaun, sounds like your first coat wasn't quite cured all the way in the spots where it crinkled. I have no idea what to do about it since I simply remove my boats from the shop, and paddle the hell out of them at this point.
I suspect you should do likewise for a week or two, then try commencing the sanding and recoating process again. Or just enjoy your new boat for the rest of the summer, and take up the remaining finish work next winter.
The first coat of varnish takes forever to dry out all the way, and subsequent coats cure much quicker. My first coat of Capt's Z-Spar took like a week here in Texas! And I'll tell ya what: when I have a new boat ready to paddle, I ain't got time to sit around and watch paint dry.
