I have used z-spar captains varnish applied with a brush only.
in that mode, over seven boats, i have never had orange peel....so i suspect that the orange peel is probably a function of the spray technique.
fwiw, i found it pretty straight-forward (albeit time consuming) to get a superb finish with brushed varnish. my latest boat uses captains varnish (6 coats) rubbed out and then polished to an absolutely professional grade finish.
is there a particular advantage you expected in spraying? the clc kayaks typically struck me as too small to really require a sprayer to save time.
