In and Out

My wife is a neat freak, and my garage is small and full of stuff. How much trouble am I buying into if I plan to build a kayak outside the garage for the most part, when wether permits, and move the work inside when I'm not working on it? Can it be done? Should it be done? If I maintain a spare set of sawhorses outside, I figure I'll only have to move the boat itself, which will be fairly light. And I'll plan to work inside later on when controlling dust on the painted surfaces becomes critical. Will humidity be a problem?
