Stupid sanding question

Okay here goes...it would seem to me that if you took your time and applied several thin coats of epoxy over the glass cloth, and did so with no runs, that it really would not be necessary to have to do much sanding. If you finished with a nice smooth surface with no runs, why would you spend many hours sanding? Clearly there is something I must be missing here. Please educate me... Bryan
