"Filling the weave"

I was just wondering..
When glassing the outside of the hull, you are supposed to use a squeege on the first layer, and the apply other layers with a roller.
Instead of applying up to 4 layers of epoxy with a roller, how about thickening the epoxy with a fairing filler? Cheaper, faster, faster sanding afterwards etc.. What would the "cons" be to such an approach? I can't see that the four layers do much structurally wise, expect as an additional safeguard against water/humidity?
