graphite and paint

I'm building a mill creek 16.5 and contemplating the following finishing scheme: graphite epoxy for bottom and 1.5" of bilge. 1-part polyurethane for ret of bilge, sheer and 1" onto deck. bright varnished deck.
my question relates to the delineation of the areas for the different finishes. is there an easy way to mask the different areas such that I don't have to tape the same line twice? can I use the fact that paint won't stick to graphite epoxy for the lower line? would it matter to have some of the varnish overlap with the paint toward the deck?
