Trent,
I usually mix the thinner and the varnish in a separate container as I do each coat. This keeps the varnish in the gallon can pure.
I would go for the gallon. That way, if you decide on extra coats - no problem.
This is also excellent varnish for other jobs in the HoneyDo jar (if you have to ask what that is - you ain't married).
