I have done it every which way. There are elements about running the sheerclamps all the way to the ends that are easier if you aren't afraid of the hairy compound bevel that entails.
The end-the-sheerclamps-short scheme has been extremely successful because it's easy the first time. I could demonstrate that a boat built that way and with an endpour is stronger than the other way. Especially if you take into account water ingress at a grab loop hole that's drilled through a sheerclamp instead of a block of epoxy.
