I say - go for it! All I've read suggests bead and cove isn't necessary; just do a running bevel as you fit your strips. Temp forms should work fine; you might consider a recessed coaming as well. Lots of folks do this, with wonderful results. If you want to stiffen up the deck a bit in strategic areas, just put another layer of fiberglass on the underside at those points (coaming, behind the seat etc.) Post pictures!
