Sport Tandem Stability

I'm thinking of building a double so I can take my mother on a kayak trip or two.

What is the stability of a Sport Tandem compared to a CH16?

My mother can handle the CH16 ok in light conditions so hopefully with me in the back a Sport Tandem would be ok. I would rather build the Sport Tandem than a regular double as it would give my wife and I a good training and fast touring kayak.
