1/2" is a good minimum. If you want a low aft deck it'll make more of a difference to make the aft deck low than to reduce the coaming stack.
A much better way of ensuring that you have room for wide ranges of movement in your torso is by ensuring the distance between the back band and the back of the coaming allows for it. In other words allowing for a couple extra inches between the back band and coaming will do more than a 1/4" less coaming height.
