Glen,
I used about 1.25 gallons resin and half that amount in hardener, of course. It was my first boat and I could probably build it with a little less now. Just getting a one gallon kit would be cutting it too close, however. I'd recommend the gallon and a half kit (that's resin) these guys sell, System Three SilverTip #2 Economy Kit.
