To bevel or to cove?

I have not had the opportunity to do a lot of research (lack of reading materials)on strip building, but the pictures of the Shearwater Hybrid are making me drool. What I really want to do is build a Mill Creek 13 hybrid. It never occured to me to bevel the strips with a block plane until it was suggested to me by someone whose identity I shall protect because he said this topic could be controversial. I always assumed I would be doing cove-and-bead because I thought it was the modern and easy way. I am capable of building either way, but I would like to know if there are any advantages or drawbacks to either method.
