I'd suggest experimenting with your thickeners. On my first kayak I used wood flour. I didn't like the lumpy texture and look. On the second I used fibres, silica and fairing mix (West System). With this, I get a nice smooth fillet the first time. Like Mac mentioned, if your fillets start out smooth and they cure before you glass them, there's not problem lightly sanding them and glassing them. You can't do that on a lumpy wood flour fillet without cursing up a storm.
