You'll have a heck of a time cutting hatches with either one. The coping saw can't work far from an edge, and a backsaw can't cut parallel to an edge for more than the width of the blade.
I know this is labeled as a "newbie" question, but I feel compelled to mention that building a boat is an absolutely excellent excuse to buy some new tools!
(I know there are affordability issues to consider, but if you need an excuse this one is dandy)
I would also say that in my experience a few good tools replace a bench full of mediocre ones, and you won't regret a decent Japanese saw.
