Varnishing Cockpit

In the next few weeks I'd like to varnish the cockpit of our MC16.5. I laid 6oz. cloth with two coats of epoxy in the cockpit so it has a nice even texture feel which I would like to maintain. Will scuffing this texture up a bit with 220 grit be enough for the varnish to adhere properly?

Also...I have enough Captains 1015 varnish for proper UV protection but I think I'd like a satin finish in the end. Any suggestions?
