Painting a Peace Canoe

I got the bottom onto our Peace Canoe this weekend and am getting ready to paint it. I have a couple of paint related questions: -How much paint should I purchase? I plan on painting the whole thing white. -Are there other options besides the Interlux polyurethane that would give similar results/durability? Any tips or thoughts would be appreciated!
