You might check out Tom Yost's skin-on-frame kayak builder's manual. No, he doesn't sell kits, but he has free plans and complete construction details for many kayak designs - several of them exclusively for children. All of them can be built for considerably less than $750, and they don't take very long to build, either. A wood framed, non-folding version of his Sea Pup or Sea Flea would be a easy project, and you'd have a great kids kayak when you finished. Yost has lots of adult sized boats, too . . . and all of his "folding" designs can be constructed as non-folding, wood framed boats (simpler, cheaper and lighter).
