I'm ready to start the interior glass and epoxy. My question is: Can I give the interior a coat of epoxy before I put in the glass? My reason for doing this is that it is now very clean and a coat now would preserve the pretty interior before all that messy glassing and filleting and would make it easy to clean up after these steps.

I think the answer is yes. Cleaning up the thickened epoxy is much easier to do once the hull has been epoxied already. At the same time, you'll coat everything in epoxy anyway when you glass so I'm not sure you're saving any trouble. Glassing itself doesn't make too much of a mess.
