I thought others might be interested in how I modified a Jimmy skiff for my local conditions, where there is a lot of shallow water. A friend gave me this skiff, which had been neglected. It had been built as the rowing model, but I added a pivoting centerboard, a mast step, and rudder.
She sails and rows well, athough it is now pretty much a one-person boat, or one adult and a kid.
I use an old windsurfer mast and sail of 60 sf and she goes right along. Over 15 knots of wind and I use a smaller mast and sail, but she is best in 6 to 12 knots of wind.
