How precisely do I need to feather the deck fiberglass to the hull? I used the packing tape method of ensuring a more or less straight edge about two inches down. Should I sand until my fingertips are unable to discern an edge?
I'm inclined not to do so, thinking that fill coats of epoxy will smooth it out sufficiently. Am I right or wrong?

I was not too careful how I did this on my Chesapeake 17LT. But after the 2 or so coats of epoxy on the deck and chine, I was able to sand it rather perfectly smooth. Part of my chine is varnished and I don't see this interface. I would not worry too much about this, however, the key to disappearing cloth is to be sure you have wet it very well on its installation. I have some areas where the epoxy went off on me and the cloth did not get as wet as it should have and these areas I will see forever.
