I think it won't be a problem. The copper will actually expand LESS than the epoxy/glass combo, so it will stretch a little when the boat gets hot. When the boat cools, the copper strip will relax back to its original dimensions.
Fiberglass expands a little over three times as much as copper with heat. Epoxies are variable, but none expand less than copper, and some a lot more than copper.
