Well I thought I was prepping to paint but was surprised I went through to wood on a few spots on the hull. Can I spot fix these or should I be recoating the whole hull ?

you can spot fix them.
it's pretty common thing that happens. quick coat of epoxy over the 'sand through' and carefully blend it in and you are ready to go.
